One of the blogs I follow is Cauldrons and Cupcakes. I have been given inspiration in many ways by reading her blog. In August she posted a recipe for easy Spinach and Ricotta Pie. It took me a while before I got around to baking it but it was worth the wait. The pie was delicious. I took it to my daughter’s and the pie disappeared very quickly. It is easy to make and the end result is so tasty.
I used silver beet instead of spinach and I put quite a lot of sweet potato in it. Give this recipe a try. You won’t regret it.
I have previously done another recipe from Cauldrons and Cupcakes – No bake yummy slice – that too proved to be a winner.
I’ve had success with Nicole’s recipes too, she has a nice no nonsense attitude to cooking and baking. I haven’t tried this one but it looks wonderful.
I started to follow her after you told me about her dahlias, I have cooked her lanb shanks again for Fathers Day, So easy and very tasty. Leftovers next day as suggested even better as just a reheat and some pasta and salad.
I will need to give that one a go too. Do you remember when lamb shanks were a cheap commodity? Not now!
