I have been reading a bit lately about the ingredients that go into the health bars/muesli bars that you can buy at the shops. Most contain far too much sugar to be healthy so I thought I would have a go at making some at home.
I obtained a recipe from http://www.realsimple.com/food and bought the needed ingredients. Some of the ingredients are expensive but it does make a lot of bars. You can find the recipe here.
I didn’t have white quinoa so I used black quinoa instead.
I think I would use sesame seeds instead of quinoa next time I make it. I would also use cranberries instead of goji berries. You can basically use whatever nuts, berries and seeds that you like.
Next time I make it I will not boil the syrup quite as long as these really are firm toffee-like bars. I would prefer them a little softer.

Tasty but too hard to bite. I had to cut them up into bite sized pieces to be able to eat them without a struggle. I need to cook the syrup for a shorter time next time I make them. This is my first try at a health bar so I will certainly give them another go.
Good for you. I’m sure they’re much healthier than what you buy.
