I was weeding the vegetable patch and realised that we still had one beetroot left over from our beetroot harvest many weeks ago. I thought it would be useless to make pickle for one beetroot and then I remembered I had seen a recipe on the internet for beetroot brownies. I seemed to remember that it only required 300g of beetroot and it just so happened that this single beetroot was exactly that weight.
I was dubious as to how the brownies would taste but was pleasantly surprised as they were delicious.

Mum makes a magnificent chocolate cake with a tin of beetroot. I’m always in awe of how good it tastes.
I was surprised that beetroot could provide part of a sweet recipe.
