The sour dough mother that my elder daughter gave me had to be binned as I had not fed it and it went mouldy. Lots of sourdough was baked during the lockdown part of COVID but I had not made a loaf for a while and was disappointed when I discovered the starter had gone off.
I went to the library to search for a simple recipe for a starter and found one in this book.
A very simple starter consisting :
2 teaspoons dried yeast (7gr)
1 teaspoon caster sugar (superfine)
1 1/4 cups lukewarm water (310ml)
1 1/2 cups plain (all purpose) flour (225gr)
The starter is runnier than my original starter but it still works with the recipe I use.
This is the first loaf I made using the new starter.
