Reposting of “Tomato relish instead of sauce” in light of the death of Margaret Fulton.

Last year I made loads of tomato sauce and this year I have also made sauce but not quite as much.  Today for a bit of a change I made relish instead.

The recipe was from Margaret Fulton’s Encyclopaedia of Food and Cookery

Here is the recipe I used

recipe“until the mixture is thick.” had me in a bit of a quandary as there are various stages of thick!  I did it until I thought it was thick enough and it seems to have turned out ok.  This is the first time I have done a pickle, relish or sauce that has flour as a thickener.

It was delicious on cheese.

 

The little tomatoes. . . .

I mentioned previously that this year I had only planted the small variety of tomatoes.  We have had a great crop and have been making good use of them.  We also had a great crop of zucchini and one of the zucchini grew to a huge size while we were away in Melbourne.  I have since learned that you can make zucchini noodles and I am now completely hooked on them  I have used the giant zucchini to make several meals of zucchini noodles.  The recipe I used was this one.  Do check it out.

We have basil in the garden as well as zucchini and I used the small tomatoes instead of two large tomatoes.  The noodles were made using our V-slicer.  So easy to do and the taste is terrific.

Food photography is not my bag but trust me, the food was fantastic.

Sauce time

This year I almost missed out on making my tomato sauce.  The place where we usually buy our sauce tomatoes wasn’t in operation so I had to find another source.  Fortunately I was able to buy a box of saucing tomatoes at the local greengrocer.  Crisis averted.  Our younger daughter’s partner is a great lover of our sauce so we wanted to make sure he had a supply.  Unfortunately we didn’t have a supply of our usual sauce bottles so he has ended up with some strange bottles.

Tomatoes are now sauce

I forgot to show the end result of the two boxes of tomatoes.  They are now sauce.  This is two pictures of the same box but it gives you the idea of the number of bottles of sauce we ended up with.  The box that you see here is the box for our neighbour.  I ran out of bottles and our second box of tomatoes had some very unusual jars for the sauce.  OLYMPUS DIGITAL CAMERA

You can see that even for the first box of tomatoes I had to resort to a large cordial bottle for the last bottle of sauce.

Tomato sauce takes precedence

No time for blogging today as I am busy making tomato sauce.  Our neighbour gave us an eleven kilo box of tomatoes last night.  Must get busy.

In the background you can see some cumquats prepared for making marmalade, that was before the tomatoes arrived.  Marmalade to be made too.
